The Process
Our Blue crabs come from the blue waters of Los Mochis Sinaloa, Mexico, and another plant in Matamoros. We take pride in our 2-year-old Texas Blue Pacific Crab company that has flourished fast. Our goal is to make the best impression from Blue Crabs to our customers. The meat we serve is majority males crab. We cook them thoroughly to a temperature of 185° F, and shortly after, they are cooled to 65°F. The crabs are separated into our fingers, jumbo lump, claw, and lump. The most difficult part, is shelling. The brown and white meat are separated. The shells are cracked and removed by hand from all our meat, besides our claws. Lastly, we package. We are sanitized and clean when we label our cups. We put our products in the ice and in a cooler before they are sent out and sold.
